This weekend, we went on a camping trip with old friends from our daughters’ preschool. It’s become somewhat of an annual October tradition: in addition to camping, the kids get dressed up for a Halloween parade, and the parents try to outdo one another in the food department. How many camping trips have you been on where families bring smokers and sous vide machines? We had smoked salmon and ribs, Korean bulgogi, handmade noodles and a pig roast. And then we used the leftovers to make bacon-fat kimchi garlic fried rice! The food was all amazing, but I left the weekend feeling bloated and in desperate need of something healthier.
By the time we got home and unpacked everything, I was too tired to cook. I didn’t feel like ordering take-out, so I turned to a favorite dish of ours: turkey and lettuce wraps.Even though it’s lean protein and low carb, the flavors are amazing. It’s also really easy to put together.
Asian Turkey and Lettuce Wraps
- 1 pound ground turkey
- 2 teaspoons olive oil
- 1 Thai or jalapeño chile, minced – I leave this out when serving it to my children; instead I add sriracha sauce directly into the wrap
- 2 teaspoons lime zest – you can also use lemons (but it tastes better with lime)
- 2 tablespoons lime juice
- 3 tablespoons fish sauce – Lucky Brand Thai Fish Sauce is a good option
- 1 tablespoons brown sugar
- 1 teaspoon cornstarch
- 1/4 cup chopped fresh basil – avoid using dried basil if you can help it
- 3 scallions, sliced thin
- 12 lettuce leaves – my children prefer to wrap theirs in nori (dried seaweed)!
- Heat oil in a large skillet over medium heat
- Add the ground turkey, chile (if using), lime zest and cook, breaking up the meat into small pieces, until no longer pink
- Whisk the lime juice, fish sauce, brown sugar, and cornstarch together, then add the mixture to the skillet and cook, stirring until the sauce has thickened (about 45 seconds)
- Switch the heat off, then stir in the basil and scallions
- Serve with lettuce leaves
If you want to pair it with rice, I recommend Trader Joe’s Organic Brown Rice (found in their freezer section). Just pop the bag in the microwave for a few minutes, and voila, you get fluffy rice that is quick to prepare and reasonably healthy.
This recipe is also great for casual entertaining because everyone can make their own wraps. Afterwards, I use any leftovers on top of salad or make a grain bowl for lunch the next day.
